2/3 cup sliced baby portabella mushrooms

Step 1
Place cauliflower in food processor and pulse 3 to 4 times until consistency of rice.

Combine cauliflower, 1 cup mozzarella cheese, Parmesan cheese, eggs, oregano and salt in large bowl. Stir until mixed well. Should resemble cooked oatmeal. Pour mixture onto parchment paper-lined baking sheet, spreading evenly with a large spoon.
